Ingredients
For the Frittata
- Ripe plantains
- Eggs
- Onion, chopped
- Tomatoes, chopped
- Fresh pepper, chopped
- Green bell pepper, chopped
- Spring onions, chopped
- Sausages or your preferred protein
- Curry powder
- Seasoning cube
- Salt
- Vegetable oil
Procedure
- 1Chop the vegetables into small, bite-sized pieces. Cut the plantains into chunky pieces, season lightly with salt, and toss to coat.
- 2Heat vegetable oil in a pan and fry the plantains until golden brown on the outside. Remove and set aside.
- 3In another pan, sauté the onions, tomatoes, fresh pepper, green bell pepper, and spring onions until slightly softened.
- 4Add the seasoning cube, salt, sausage or your chosen protein, and curry powder. Stir well and cook briefly.
- 5Crack the eggs into a bowl, add a little salt, and whisk until combined.
- 6Add the sautéed vegetable mixture to the eggs and mix everything together.
- 7Lightly grease a pan and pour in the egg mixture. Arrange the fried plantains evenly over the top.
- 8Cover the pan and cook on low heat until the eggs are completely set and the frittata is cooked through.
Isaiah's Notes
- Keep the heat low once the eggs go into the pan so the bottom doesn't burn before the centre cooks.
- Don't overcrowd the top with plantains. Leave enough space for the egg mixture to hold everything together.
- You can swap the sausage for any protein you like.
Slice and serve warm on its own, or pair it with a fresh salad, bread, or your favourite breakfast side.
